I find it disturbing that Chef do not take food costing as seriously as they should.
Of course you need to show your cooking style and be master of the oven but at the end of the day you need to make some money out of your trade.
Yes I did say TRADE. It is commerce, you buy some food, transform it, give it some dressing up and sell it to customers. They will pay you money for your service (transformation, skill, service).
But you do need to know what it really cost you to produce such fair.

The thing is that 99.9% of chefs do take recipe costing seriously. The thing that bothers me is that a huge amount of food establishments do not have software to assist with cost management.
