CAYG to Help Your Stewarding Service

I said in the last post in this category that stewarding is very important and provides a backbone to any food and beverage department.
Personal from the stewarding department are very important in maintaining the spotless, spick and span condition of all their areas of responsibility in your establishment.
There are a number of ways you can help improve the performance of your stewarding service.
You can help out the best by following the CAYG principle.
CAYG, also called CleaGo, or Clean as You Go is an old phrase used by elementary teachers during recess.
You will hear teachers shout to their class, “Children, clean as you go, so we can help out the friendly custodian.”
You will see the children scramble and put their paper wrappers in the garbage can, while they pick up any trash lying around their seats as they went along.
The CAYG principle can also be applied inside the kitchen. Just put everything in the proper order and the proper place at once, without procrastination.
In the kitchen, if you see trash in front of your work area, just dump it in the trashcan. If you see knives lying around the table, put them in the holder right away. When you make some unnecessary mess, just wipe it, or throw it out and do the rest of your work.
Your time is not wasted since when you clean and go, your workflow will be smooth and unimpeded by clutter. Without clutter, your work will be optimal and your productivity will increase.
The process sounds simple, but you really need presence of mind and a conscious disciplined effort to put it to work.
Stewarding will appreciate your effort when they see how clean you always leave your area.
This will allow them to really clean up and sanitize the place, more than just picking up random trash that you can clean up in the first place.
