Chef Armin Leitgeb – Created His Own Culinary Approach to Traditional French Cuisine

It was only in 2008 that Chef Armin Leitgeb became the head chef of Singapore’s Les Amis, but under his leadership, the restaurant has received countless praises from both its diners as well as the food critics who visit this fine-dining restaurant.  Right now, Les Amis was named as the 78th best restaurant in the world, as named by San Pellegrino.

Chef Leitgeb was born in Austria, and his career choice of being a chef took him to some of the best restaurants in Europe, most of which have earned Michelin stars.  He went to Munich where he found work in Tantris, working under its famous Chef Hans Haas.  He spent three years in Tantris, and when he left Munich to further his culinary training, he took with him a good relationship with Chef Haas who, to this day, still remains a very good friend of his.

His culinary career also took him to France where he found work at the Auberge de L’ill in Alsace.  Here, he got to learn the cooking techniques of Chefs Paul and Marc Haeberlin.  After Alsace, he then went to Jardin des Sens where he got to work with its three-Michelin star chef, Chef Jacques- Laurent Pourcel.  After Europe, he then went to the United States where h found work in the kitchens of Chef Thomas Keller’s The French Laundry in California then later to Per Se in New York.

Chef Leitgeb soaked in everything he could learn from these world-famous chefs, and through what he learned from them, he created his own culinary approach to traditional French cuisine.  He admits, however, that it was Chef Keller who made the biggest influence in his culinary career.  He states that Chef Keller taught him the difference between being a chef and being a cook and that his mentor has helped him bring out the chef in him.

He came to Singapore’s Les Amis in 2008, and armed with a very impressive resume and an excellent culinary reputation that precedes him, he made the already famous French restaurant more famous with his culinary skill.  With his culinary skill, he created a perfect harmony between flavors and textures that his cuisine never failed to give a gastronomic experience that will leave the diner wanting for more.  In fact, it can be said that his dishes are an orchestra of flavors and textures, with each element fully complementing the other ingredients in his dishes.

Under his leadership, Les Amis of Singapore became known as the finest French restaurant in the city, and it has received great praises not only from its diners but also from food critics.  Right now, they have been named as the 78th best restaurant in the world.
