It was not an easy decision for Rust en Verde’s owner Jean Engelbrecht and its chef David Higgs to set the bar high – and the prices high – when they first opened the restaurant. It was a risk because the restaurant was still new. We can say, however, that the risk paid off. The restaurant got into this year’s El Pellegrino World’s 100 Best Restaurants list – and that is not an easy feat. You would likely raise your eyebrow after perusing their menu. You don’t know “expensive food” until you have tried this restaurant. A meal here will definitely squeeze every cent out of your pocket. In fact, the price of a meal at Rust en Verde will probably be the most you will have to pay for a meal in South Africa.

Unlike other restaurants, Rust en Verde does not offer a la carte options. There is no way you can get a starter, a main dish, a dessert and a glass of wine without emptying your pockets dry. The restaurant only offers three different kinds of courses with varying prices and it is up to you to make your choice among these three. This goes without saying of course that you should only dare to try Chef David Higgs creations if you have the money to spare. What the restaurant lacks for commercialism, however, it makes up for its ambiance. It creates a sense of excitement – a sense of occasion. One can probably credit this to its amazing location.

There are people who would argue that Chef Higgs dishes are a bit disappointing. Of course, who hasn’t said that about any chef? We can’t please them all. People’s tastes vary and there lies the beauty of culinary arts. This form of art will always grow as long as chefs struggle to create dishes after dishes to satisfy discerning palates. This is the same driving force behind Chef Higg’s stubbornness to create culinary perfections.

As a top chef, he offers modern take on classic dishes. Like every good chef, he has always insists on the freshest ingredients. He has perfected the art of squeezing out every last bit of flavor from any ingredient. Some people would probably criticize his cooking and dismiss it for an overpriced haute cuisine. He, however, would definitely disagree. He offers classic South African cuisines with a touch of European flavors – that’s a taste you won’t easily find elsewhere. Perhaps, it’s something worth paying for.
