Chef Joachim Wissler – Perfecting His Culinary Style on His Own and Impressing the World Thus Far

During the recent years, Germany has been attracting the attention of the world with the rise of many Michelin-starred chefs.  Among many of Germany’s top chefs is Joachim Wissler.  Chef Wissler’s restaurant, Vendome, has grabbed the 25th spot in this year’s list.

In truth, this is just one of the many achievements of Chef Wissler.  After all, he is one of the world’s top chefs.  He continuously pushes culinary frontiers and he steadily challenges traditions.  He draws inspiration from long-forgotten recipes and he creates new recipes using modern cooking techniques.  The result is often outstandingly unique dishes, with new twist to flavors.  He is one of the major influences in the development of German cuisine for the past several years.

Let’s Talk about Vendome

Vendome serves as the culinary playground of Chef Wissler.  This is part of the Grandhotel Schloss Bensberg.  The actual restaurant, Vendome, is actually located in a cavaliers’ house that has been renovated.  The décor fits the modern world perfectly, but the restaurant has a baroque feel to it.  The staff, however, endeavors to create a harmonious, warm, and relaxing ambiance.

What about the Chef?

Chef Joachim cannot claim to have been influenced by anyone.  Unlike other chefs of his generation, he never had a mentor.  Thus, he struggled on his own and he was able to develop his own distinct style of cooking.  However, he has managed to influence several outstanding German chefs.  Ironically, he never had a mentor, but he has serve as a mentor to many.

He first started his first chef job by working as an apprentice at Traube Tonbach.  At that time, the kitchen’s rein was held by Harald Wohlfahrt.  Upon completion of his apprenticeship, he handled several kitchen positions before he eventually became Macrobrunn Restaurant’s chef de cuisine.  While working at Macrobrunn, the restaurant earned 2 Michelin stars.  He continued working in Macrobrunn until he was enticed by Thomas Althoff, the owner of Grand Hotel Schloss Bensberg to work as chef de cuisine of Vendome.

The restaurant opened in 2000 and it was immediately awarded its first Michelin star the following year.  Another star was again awarded in 2003.  The final star was awarded in 2005.  Now, the restaurant is generally recognized as one of the best restaurants in Germany; although, inarguably, it is also one of the best restaurants in the world.  This is the handiwork of a chef who never had any mentor.
