Ensconced within the walls of the glamorous Four Seasons Hotel, Caprice opens its doors to eager diners day after day and night after night. This is the restaurant that one must definitely try out if he or she finds himself or herself in Hong Kong. This is where Chef Thierry amazes his diners with his culinary skills, the same skills that were honed as he worked in various restaurants including Le Cinq in Paris.

Although there are countless French restaurants in the world, Caprice garners admirations and high marks because of the chef’s innovative intake on classic French cuisine. Combined with the flawless setting and awe-inspiring view of the Victoria Harbour, it is not surprising why this restaurant has managed to get into the World’s Best Restaurants list. It has actually landed the 78th spot in this year’s El Pellegrino list. The whole restaurant echoes of a really classy atmosphere. The walls of the restaurant are lined with portraits of women ala Art Nouveau. Of course, there is a dash of something oriental here and there. Caprice’s staff stands by from a reasonable distance, always ready to serve and to assist diners as they peruse the restaurant’s menu. Needless to say, it is relatively easy to enjoy France while you are in Hong Kong when you dine at Caprice.

Caprice is one of those few restaurants boasting of an open kitchen. The chef’s table is specifically set behind the restaurant’s kitchen. Of course, aside from the chef’s table, the restaurant also offers a bar and lounge area and a private dining room where one can enjoy the house’s specialties with ingredients like the Brittany blue lobster, Challans duck, Bordier butter, Bresse chicken and fleur de sel. It is not surprising why this restaurant has been awarded two Michelin stars by the Michelin Guide Hong Kong and Macau.

Let’s Get to Know the Chef

Vincent Thierry is a devotee of the French purist form of cooking. However, this does not stop him from eating Hong Kong cuisines, which he regards as “interesting.” Yes, “interesting cuisine” would of course include frog’s legs, duck tongue and pig’s trotters.

After working for more than 18 years of cehf jobs in various restaurants in France, he is certainly broadening his horizons when it comes to Asian cuisines. It is doubtful if he would ever serve duck’s tongue, however, in Caprice. He is a strict follower of traditional French cooking techniques and there is no room for “interesting things” like pig trotters, perhaps. He, however, has grown fond of various Asian cuisines especially Japanese and Thai cooking. It is these cuisines that have inspired him to use certain Asian ingredients in his cooking. He now uses lemongrass, soy sauce and seaweeds in some of his dishes. Admittedly, he has toyed with these particular ingredients while working in France. Still, it cannot be denied that he is devoted to French cooking. This is exactly why people troops towards the doors of Caprice.
