Chefs Soren Ledet and Rasmus Kofoed – The Geniuses Behind Geranium

If there is one place that one should definitely do while visiting Denmark is to try out the delicious dishes at Geranium. This restaurant is run by two of the country’s best chefs – Soren Ledet and Rasmus Kofoed. These chefs chose to use organic ingredients when creating their culinary masterpieces. They also opt for biodynamic wine selections. Not surprisingly, this is one of the best restaurants in the country. In fact, some would argue that this is the best in all of Denmark. The whole place is entirely picturesque which is just as well as one could expect considering that the restaurant is located at Copenhagen’s Royal Garden.
The restaurant is actually the brain child of its famous chefs. Both chefs come with the highest recommendations and honors. Chef Kofoed, for instance, has recently won the silver medal in the Bocuse d’Or. This is not an easy feat and it surely is a huge honor for Denmark.
Of course, Chef Ledet does not fall short when it comes to honors and commendations. For one, he won the Chef of the Year 2004 award in Denmark. He has also worked in the famous Noma as the restaurant’s co-head chef. He actually started his chef job working at world-class restaurants. Over the years, he has won countless of awards and recommendations. Of course, aside from Noma, Chef Ledet also worked at Hotel D’Angleterre and Sollerod Kro. Ironically, his partner Chef Kofoed also worked at Hotel D’Angleterre. He was, however, sacked from the establishment after he refused to serve fast food.
Needless to say, both chefs are world class. In truth, it is not just the chefs who can claim such honor. Geranium’s kitchen is staffed with people who are equipped with top-notch culinary skills.
Just like all other world-class restaurants, Chefs Soren Ledet and Rasmus Kofoed ensure that they only use the best ingredients in the market. They know that this is actually the secret to good food – or rather, exceptionally great dishes. When it comes to ingredients, they pretty much stick to organic and biodynamic. Diners will find herbs placed everywhere. They also use meat from ethically sourced products. They also use wines that can meet their strict standards. Wines are organic as well. Actually, every dish in the restaurant are organic. The chefs love to use classical or traditional Danish recipes and they infuse modern cooking techniques in order to update these old recipes. You would be surprised at how delicious their version of the classic Danish porridge could be.
These two chefs are not just practicing molecular gastronomy. In truth, their culinary techniques and methods go way beyond this modern form of cooking. This is actually the best reason why they are able to capture the world’s palate with their cooking.
