Fulvio Pierangelini – The Man Behind Gambero Rosso

Chef Fulvio Pierangelini is the man behind one of the most famous restaurants not only in Italy but worldwide as well, and this is the Gambero Rosso. Gambero Rosso was established in 1980, and it was still far cry from its glamorous three-Michelin star status. However, one could already clearly see and taste the culinary expertise of its head chef, Chef Pierangelini.
From the smallest ingredients to the main ingredient of his dish, he carefully selects his ingredients and gives his dishes a very good balance between texture and flavors, giving consideration to each of his ingredients and making sure that they totally complement each other. His culinary style and dishes captured the hearts of his diners that, pretty soon, his little eatery in San Vincenzo not only experienced an increasing number of clientele but also began earning awards, praises, and accolades, even from food critics. In fact, it can also be said that Gambero Rosso has become so much a part of the town’s tourism that tourists and visitors often come to San Vincenzo just so they could get a taste of his exemplary cuisine.
In time, he earned his three Michelin stars and a spot in the S. Pellegrino list.  However, in 2009, he slipped down a few numbers and landed on the 28th spot. It was also in the same year that he decided to close Gambero Rosso to pursue a consultancy career, to the dismay of his restaurants loyal clients. But it was not only his clients who were disappointed with his decision to close Gambero Rosso though but also the town’s local tourism board.
As stated above, his restaurant has become a very integral part of the town’s tourism industry that there were a huge number of tourists and visitors who only visit San Vincenzo for the sole purpose of dining in his famous restaurant. With the restaurant closed, the town’s revenue is sure to drop. Their mayor was even quoted to say that Chef Pierangelini and Gambero Rosso are resources that the town could not afford to lose. Sadly, this did not stop Chef Pierangelini from following his heart. He closed the restaurant in mid 2009 to travel all over the country as well as abroad as he becomes the appointed consultant chef of one of the most popular hotel groups in the world, the Rocco Forte Hotel Group.
His interest in becoming a consultant started in the early 2008s when he did a consultancy job for Rocco Forte Collection. Aside from this, he also did a consultancy job in Rome for the l’Hotel de Russie where he lent his expertise in renovating and modernizing the kitchens of the hotel’s restaurant.
Now that he is traveling and doing consultancy jobs for the Rocco Forte Hotel Group not only in Italy but abroad as well, questions and speculations abound. Some are saying that the Gambero Rosso will no longer open its doors to the public, while some are insisting that it will open once Chef Pierangelini comes home. Some are saying that he is in Germany, and still others are saying that he is a chef on a ship. There really are many rumors, but one thing is for sure, the restaurant will remain temporarily closed, as stated by his wife, Emanuela.
The latest news for Chef Pierangelini was that he, together with some of his former students, opened the holiday season with a scrumptious dinner at the Le Jardin de Russie. The event was held last November 29 and 30, 2010, and it featured some of the best dishes that have made Gambero Rosso a huge success not only in the country but internationally as well.
With his new consultancy job, there are still a lot of fingers crossed that Chef Pierangelini will come back soon to San Vincenzo and open Gambero Rosso once more. However, until then, his fabulous dishes will always remain in the hearts and minds of those who fell in love with his cuisine.
