Great Dishes for Vegetarians

Being a vegetarian is a healthy way of living. Be it for religious, moral, and social reasons, going on a meatless diet is indeed good for the body. Various study showed that people who mainly consumed vegetables on a daily basis have lower chances of developing cancer, heart-related problems, and other diseases.
Basically, a vegetarian is someone whose diet excludes all animal products, such as pork, beef, fish, and poultry. There are some vegetarians who eat fish, while there are some who avoid eggs and dairy products. One of the most common reasons why people choose to be vegetarians is because of their religion. Their belief forbids them from killing and eating living things. There are also some who do it for ethical reasons. They stopped eating meat because they couldn’t stand all the suffering that an animal has to go through to enable humans to have something to eat on their tables.
One of the common problems of being a vegetarian, however, is the few dish options. Some people say that a vegetarian’s diet is full of side dishes and no main courses. But with little creativity and ingenuity, you can create great dishes that is best suited for a vegetarian like you. Here are some great vegetarian dishes that you would surely enjoy.
Mixed mushroom omelet with soy glaze. This combination of button, Swiss brown, and enoki mushrooms covered in beaten egg would surely delight event the meat lovers. Preparing this dish is easy too. All you have to do is stir fry one cup each of the abovementioned mushrooms, garlic, and vegetable stock in a wok. Then make an omelet using eight beaten eggs and a special sauce made from cornflour, vegetable stock, and soy sauce. Top the omelet with the stir-fried mushrooms and drizzled it with the sauce and you are ready to go. This particular dish is rich in protein, sodium, calcium, and iron.
Thai rice sambal. Want to try something exotic? This rice dish, which combines brown Thai rice, zucchini, and capsicum, is rich in protein, calcium, and carbohydrates. You can get your daily energy fix by eating this savory and nutty dish. To prepare it, heat oil in a wok then stir-fry lemongrass, garlic, ginger, and vegetables for two at least one minute. Dump in the soy sauce, brown sugar, and cooked brown rice, mixing them thoroughly. To finish it off, add a handful of chopped fresh mint and coriander. You can also put some peanuts as garnishing if you like.
Spicy carrot and pumpkin soup. This tasty treat will help keep you warm and healthy during winter. Saute onion and garlic in a large pan. Then, add chopped and peeled carrots, potatoes, and pumpkin, and flour. After mixing it well, let the flour absorb the oil before putting them on a slow cooker. Season them with curry powder, paprika, salt, and pepper. Let them sit for at least four hours until the vegetables become tender. Process the soup until it become smooth before reheating it using the slow cooker.
