Probably one of the most common vegetables used within the kitchen.

Items required- convection oven, red bell pepper, olive oil, salt, pepper from the mill, chopping board, knife, 3 stainless steel bowls, baking tray, ice cubes, cling wrap, plastic food service gloves, storage container

Procedure- Pre-heat the convection oven to a temperature of 250 degrees C.

Wash the red bell peppers, cut them in half and remove the seeds. Place in the stainless steel bowl and toss with the olive oil and an amount of salt and pepper.

Remove the prepared red bell pepper halves and arrange on the baking tray skin side up. Do not place the peppers too close to each other on the tray.

Put peppers in the oven and cook for a few minutes until the skin of the bell peppers is blistering. Remove the bell peppers from the oven, place into a stainless steel bowl, and cover with cling wrap.

Place the bowl on an additional stainless steel bowl with ice.

Push down the cling wrap to create a vacuum effect.  Leave until the peppers have cooled, remove cling wrap and proceed to peel off the skin. Place in storage container, use as required.
