Mango Creme Brulee Recipe

Ingredients
900 ml Cream
100 ml Milk
300 grams Mango Puree
4 each Egg Yolks
100 grams White Sugar- Plus a extra 50 grams for glazing
Method
Place the milk and cream in a saucepan and bring to the boil. In a stainless steel mixing bowl whisk the white sugar and egg yolk until creamy in texture, pour in the milk and cream, mix well until combined. Add the mango puree, using a spatula mix until the mango is incorporated into the cream mixture.
Strain, pour mixture into suitable ramekins and cook in a water bath at 160 degrees C for 30 minutes.
To finish glaze with white sugar and serve with brandy snap, mango compote and red currants
