Recipe- Crab Fritters

Ingredients
Crab Meat 600 grams
Potato- Steamed and Crushed 200 grams
Mayonnaise 100 ml
Spring Onion 50 grams
Horseradish 50 grams
Red Pepper 70 grams
Egg 1 Each
Plain Flour 100 grams
Tempura Batter 300 ml
Salt- To taste
Pepper- To taste
Method
Pick the crab meat ensuring that there are no small shell particles remaining. Mix the crab meat, potato, mayonnaise, spring onion, horseradish, red pepper and egg. Season to taste. Mould the mixture into cake like balls. Place the crab cakes in the refrigerator, allow to set. Lightly dust with plain flour, dip in the tempura batter and deep fry. Use as required.
