Recipe- Marinated Olives

Ingredients

Fennel Seeds 2 grams

Cumin Seeds 1 gram

Orange- In Zest and Juice 200 grams

Lemon- In Zest and Juice 100 grams

Garlic Cloves- Minced 20 grams

Dry Red Chili Flakes 5 grams

Oregano- Finely Chopped 10 grams

Red Wine Vinegar 40 ml

Olive Oil 300 ml

Parsley- Finely Chopped 10 grams

Black Olives 1000 grams

Method

Rinse the black olives under a running tap for 1 hour to remove the vinegary taste. Mix all ingredients together. Add the black olives to marinade, mixing well with your hand to ensure the olives evenly coated.

Place in a sealable container and refrigerate accordingly.
