Recipe- Spring Onion Oil

Ingredients

Spring Onion 1800 grams

Olive Oil 480 ml

Salt- To taste

Pepper- To taste

Method

Wash the spring onions and cut into 10mm sections.

Place the prepared spring onions into a blender, with the motor running slowly stream in the olive oil. Season to taste.

Remove the mixture from the blender and allow to settle. Place a strainer over a stainless steel bowl and pour the spring onion oil in. Using a rubber spatula press the oil through. Discard the leafy content. Adjust the seasoning.

Place in a bottle ad use as required.
