A sauce cook, as the name suggests, is in charge of the making the sauces.  He is also in charge of cooking dishes that need sauces or gravy.

Sauce Cooks, Their Rank and Responsibilities

In truth, a sauce cook is a line cook or Chef de Partie.  Being one, he is in charge of one specific aspect of food production.  He is in-charge of the sauces, hors d’oeuvres, stews and gravy.  When it comes to kitchen rank, a sauce cook is the third highest rank in the kitchen.  It is the highest position among all station cooks.  He answers to the Sous Chef, who in turn answers directly to the Executive Chef.

A saucier (sauce cook) usually works in large kitchens and upscale restaurants where sauces complementing dishes and entrees are regularly prepared and served.  He prepares all kinds of sauces ranging from spaghetti sauces, marinara, pestos, duck sauces, meat sauces, Alfredo sauces, hollandaise, gravies, barbecue sauces and garlic butters.  He may be asked to cook different kinds of soups throughout the day.

He may also prepare thickening agents for other dishes that need to be prepared.  This Chef de Partie may also be assigned to prepare dressings for salads and desserts.  He may be asked to prepare chocolate sauces for pastries and cakes.  In order to do all these things, a saucier needs to be knowledgeable of different mixtures.  He must know how to combine the right ingredients in order to create delicious and savory sauces.

How to Become a Sauce Cook?

Depending on where a saucier is working, he can make a fairly decent wage per hour.  An upscale restaurant may offer a competitively large salary.  It may take a dedication and hard work before one finds employment in a good restaurant.  Fortunately, one can always find work in many places.  Many of them offer fairly competitive salaries.  Basically, salaries depend on the saucier’s experience and expertise.  A sauce cook may start off at an hourly rate of $11, but this rate can increase depending on the experience.

In order to become a sauce cook, however, one must complete a Bachelors Degree in Culinary Arts.  A person also has to have at least two years experience in the culinary field.  He must be knowledgeable about the various aspects of food preparations including menu creation.

Becoming a saucier chef or sauce cook can be very exciting.  It can also be very rewarding, but you need to have the passion, knowledge, skills and the drive if you want to succeed in this field.
