S. Pellegrino’s 100 World’s Best Restaurants – 2010

The names of those restaurants that got into the S. Pellegrino’s 100 World’s Best Restaurants this year, 2010, are just names, but what made them popular and gave them this victory are the head chefs behind the names.  The head chefs and his staff deserve the credit as much as the restaurant itself.  They are, after all, the backbone of the restaurant, and they deserve the recognition and the honor given to the restaurant.

We are going to give you the list of the 100 lucky restaurants that received this much-coveted accolade as taken from The World’s Best Restaurants Awards.  The awards were given by the prestigious judges of the S. Pellegrino.

1. Noma http://www.noma.dk/, Denmark

Noma went up two places – from the third spot to the top – this year to become the World’s Best Restaurant.  Its head chef, Chef Rene Redzepi, is known for innovating traditional Nordic cuisine, infusing creativity and balancing flavors in the dishes that he creates.  Noma is more than just a place where you can get an excellent meal, but it is an experience for the senses.

Having enjoyed the position of being the top restaurant five times, El Bulli of Spain went down a notch and landed the second place.  El Bulli’s head chef, Ferran Adria, is a world-renowned chef and has received numerous awards for his dishes.  In fact, he has been named as the Chef of the Decade, so it is not surprising that this restaurant has been named as the top time and time again.

Down a spot from the second place, Head Chef Heston Blumenthal deserves the credit for having The Fat Duck included in the top 50.  Chef Blumenthal is recognized for his fun and creative approach to his dishes, and he always makes it a point to perfect old favorites, giving his diners something to look forward to each and every time they dine at The Fat Duck.

Mixing traditions with modern innovations, the three Roca brothers who came from humble beginnings have taken their restaurant worldwide, and it seems that there is no way but up for them as they bagged the fourth place for El Celler de Can Roca.  Where else can you experience excellent Spanish cuisine with a twist but at this lovely restaurant?  The brothers – Joan Roca, the head chef; Josep, the head sommelier; and Jordi, the head pastry chef – have given its diners and critics a wonderful balance of flavor and aroma, enough reason to get them to the top.

5. Mugaritz http://www.mugaritz.com/, Spain

Down one spot from fourth place, Mugaritz of Spain has shown that less splendor is elegant.  Head Chef Andoni Luis Aduriz’ techniques in bringing out the best flavor in each of his dishes’ ingredients have always enchanted his diners.  Many have said that dining at Mugaritz was more of a feast of the senses than simply enjoying a good meal.

6. Osteria Francescana http://www.osteriafrancescana.it/, Italy

Located in Italy, Osteria Francescana climbed seven spots to land at the sixth place.  Chef Massimo Bottura, its head chef, is recognized in Italy for his eccentric approach to cooking.  He makes use not only of the traditional ways of cooking but also the modern approaches in cooking, and what come out are superbly delectable dishes that are artistically and creatively plated.

Alinea owes its spot in the top 50 to its head chef, Chef Grant Achatz.  Chef Achatz is recognized for his very innovative dishes like turning the simple peanut butter and jelly sandwich into a very exotic dish.  Having worked at The French Laundry, Chef Achatz has more than just honed his skill but has also developed techniques that are completely his, but he is not done in his studying though as he is still looking for ways to perfect his dishes.  Diners of Alinea can expect more from the head chef and his staff.

Daniel of the United States may not have bagged the top position, but those at the top have something to fear from Daniel.  This restaurant has climbed a whopping 33 spots, so it will not come as a surprise if they climbed higher come the next year’s selection.  This is all thanks to Head Chef Daniel Boulud and his flair for giving time-honored French dishes an American twist, a feat that made them worthy of being included in the top 10

What made Arzak stand out from among the numerous restaurants in Spain is its highly-praised New Basque cuisine.  Its head chef, Juan Mari Arzak, has the talent of giving traditional Basque dishes a modern twist.  Aside from their specialty, Arzak also offers French cuisine as well as Spanish cuisine.  The kitchens of Arzak are being managed by the father-and-daughter tandem of Juan and Elena Arzak, and they pushed their restaurant to the top, although they have dropped down a spot since last year.

Per Se landed on the tenth spot for this year’s World’s Best Restaurants, coming down four spots.  This restaurant is known for recreating The French Laundry for the city of New York, but making it stand out, of course, from the latter.  It is recognized for its signature dish, which is the Oyster and Pearls, as well as for offering contemporary American dishes.  Its head chef right now is Chef Eli Kaimeh who has just recently taken the helm from Chef Jonathan Benno.

Climbing 29 spots from the 40th spot, Le Chateaubriand is another restaurant from France that many have to watch out for.  The head chef, Iñaki Aizpitarte, is given the credit for this superb advancement in the ranks of the World’s Best Restaurants.  Le Chateaubriand is recognized for its haute cuisine, reinventing classic cuisine into bold and innovative dishes, full of flavors and colors.

The La Colombe is another restaurant that those at the top should be aware of.  They might steal their position one year and become the number one restaurant of the world.  Up 26 spots from the 38th spot, La Colombe never fails to amaze its diners, especially its critics, for its wonderful infusion of Asian and French cuisine.  This prestigious award is credited to their head chef, Luke Dale Roberts, for his stunningly creative and flavorful dishes.

Pierre Gagnaire, down four spots from the ninth, is what modern French cuisine is really all about, plus more.  Its head chef, Chef Pierre Gagnaire, is known for reconstructing the French cuisine and giving it a different twist by combining contrasting flavors and textures without losing their excellent taste.  His unique skill earned Chef Gagnaire numerous awards and praises from his patrons.

14. L’Hotel de Ville – Philippe Rochat http://www.philippe-rochat.ch/, Switzerland

Head Chef Philippe Rochat of Restaurant de L’Hotel de Ville pushed his restaurant up two spots since last year.  His dishes are mostly French, and instead of making them too flamboyant when it comes to flavors, he insists that three flavors are more than adequate to make a good flavor combination.  Aside from this belief though, his plate presentations are superbly refined that they almost look like an art – truly a feast for the palate and the eyes.

Not having moved a spot, Le Bernardin is still enjoying its 15th spot on the World’s Best Restaurant list.  This restaurant is more commonly known for its superb presentation of seafood and, in fact, has been dubbed as the leading seafood restaurant in the United States.  The credit is given to head chef, Eric Ripert, who can turn any simple seafood to incredible dishes.  Chef Ripert is also known for his strong stand against using any endangered specie on his menus.

16. L’Astrance, France

The L’Astrance may be a small restaurant when you compare it with other top-end restaurants, but their dishes really surpass many of them.  In fact, if there is one thing that makes L’Astrance stand out is the fact that the dishes served by its head chef, Pascol Barbot, are exemplary.  His dishes are a mix of international cuisines, although the Asian cuisine is very much apparent in some of his creations.  L’Astrance is a very comfortable restaurant, enchanting and charming in its atmosphere.

17. Hof Van Cleve http://www.hofvancleve.com/, Belgium

This Belgian restaurant climbed nine spots from the 26th position, and the credits are given to its head chef, Peter Goossens.  This is the best place where you can truly enjoy a full-course meal at its finest, but before your meal though, make sure that you work up a big appetite to make room for all the wonderfully scrumptious dishes that Chef Goossens has in store for his guests.  You will love the harmony between flavor, texture, and aroma, and his dishes will always leave you wanting for more.

18. D.O.M. http://www.domrestaurante.com.br/, Brazil

From the 24th spot to the 18th spot, D.O.M. is on a continuous roll to reach the top 10 of the World’s Best Restaurants.  Its head chef, Alex Atala, is a genius when it comes to whipping up a traditional French dish.  Not only does he make use of nothing but fresh produce, but he also makes use of obscure ingredients from the deepest regions of the Amazon and incorporates them in his dishes, giving his patrons an exquisite palatable experience.

19. Oud Sluis http://www.oudsluis.nl/, Holland

Located in the little town of Sluis, Netherlands, Oud Sluis is a very simple restaurant that is situated amidst shops, which is a very unlikely place for an upscale dining experience.  However, the dishes served by Head Chef Sergio Herman in Oud Sluis have made their mark on many of its diners, especially its critics, since it move up 10 spots from last year’s 29th position.  Now, if you want to enjoy what Oud Sluis has to offer, be sure to book in advance – months ahead of your preferred schedule, to be exact – so as to assure yourself that you do get a table.

20. Le Calandre http://www.calandre.com/, Italy

Le Calandre is another restaurant that is going to give the top restaurants a run for their money as they also climbed 29 spots higher than they were last year at 49.  Although they dropped a good 13 spots to land in 49, the success of this Italian restaurant is given to its head chef, Massimiliano Alajmo, once more as he proved to the world and to himself that they deserve to be in the top 50 list; hence, the 20th spot.  He not only gave his restaurant a big boost after the hard fall, but he is also considered as the youngest chef to have earned three Michelin stars in his career.  This is the best place if you want hearty yet sophisticated dishes.

21. Steirereck http://steirereck.at/, Austria

Steirereck is nine spots higher this year than last year’s 30, and there are very good reasons why they deserve to be in the top 50.  The atmosphere and the service are impeccable, and the dishes are mouth-watering.  Head Chef Heinz Reitbauer has the knack for combining the ingredients in such a way that they totally complement each other, and he plates the dishes in a very artistic and creative style that leaves no doubt in your mind that Steirereck is, indeed, one of the best.

Vendome may be new to the list – having been included into the top 50 just last year – but it has proven to itself once more as it moved three spots higher from 25 to 22.  Head Chef Joachim Wissler knows how to showcase traditional French cuisine; however, he also knows how to turn traditional German cuisine to German haute cuisine.  He is not afraid of going out of the box and using pig’s ear in his dish or combining calf’s cheek with lobster, a feat that many chefs cannot surpass.

23. Chez Dominique http://www.chezdominique.fi/, Finland

If there is one thing that can be remembered of Chez Dominique and its head chef, Hans Välimäki, is how balanced a traditional and an experimental cuisine could be at the hands of a master, and Chef Välimäki is a master of his craft.  This restaurant located in Helsinki, Finland is famous for its surprise menus, which include the top choices of the chef.  A full nine-course meal valued at €250 is truly worth the gastronomic experience.  This year’s Top 100 world’s best restaurants placed him at 23 though, after coming down two spots.

24. Les Creations de Narisawa http://www.narisawa-yoshihiro.com/, Japan

Les Creations de Narisawa may have slid down four spots from 20 to 24, but this restaurant in Japan deserves to be included in the top 100.  Head Chef Yoshihiro Narisawa studied in Europe and perfected his cooking skills, and when he came back to Japan, he brought with him an unconventional approach to French dishes.  Chef Narisawa is not afraid of thinking out of the box and pushing the gastronomic boundaries, so he could present always mouth-watering creations to his diners.

25. Mathias Dahlgren http://www.mathiasdahlgren.com/, Sweden

Another big round of applause should be given to Mathias Dahlgren, the head chef and the restaurant’s namesake, for climbing 25 spots higher than last year’s 50th place.  Chef Dahlgren and his restaurant deserve this honor, not only for bringing out and showcasing traditional dishes that speak of Sweden’s heritage but also for giving his patrons choices between formal and informal dining experiences.  It would not come as a surprise if Mathias Dahlgren finally gets into the much-coveted top 10 positions.

26. Momofuku Ssam Bar http://www.momofuku.com/, USA

From the 31st to the 26th spot, Momofuku Ssam Bar is making its presence known in the culinary world.  This restaurant is slowly climbing up the ladder of the 100 World’s Best Restaurants, and it will not be long until they are in the top 10.  More and more people are taking notice not only of the unique dishes that Head Chef David Chang creates but also of the friendly atmosphere that Momofuku Ssam Bar provides.  Where else can you find an excellent restaurant, included among the top, that is offering dishes under $20?

27. Quay http://www.quay.com.au/, Australia

Another new name to this prestigious list last year, Quay has climbed 19 spots from 46 to 27.  Its head chef, Peter Gilmore, knows his trade and only picks the freshest produce for his dishes.  In fact, he has collaborated with a number of farmers and even has his own organic garden to assure his diners of the freshness of his dishes.  What makes this restaurant very popular is Chef Gilmore’s skill in highlighting the textures and the flavors of his dishes, a sample of which is his Eight Texture Chocolate Cake.

28. Iggy’s http://www.iggys.com.sg/, Singapore

There is no doubt that Iggy’s deserves to be in the top 100.  The fans of this restaurant have been saying that Iggy’s should have been on this list long before last year, but it was only in 2009 that Iggy’s got into the list.  However, its head chef, Ignatius Chan, is out to prove to the world that his restaurant and his dishes deserve this great praise, and prove it he did when they climbed 19 spots from last year’s 45 to this year’s 28.

29. L’Atelier de Joel Robuchon http://www.joel-robuchon.com/, France

Head Chef Joel Robuchon of L’Atelier de Joel Robuchon is one of the most popular chefs in the world.  He is recognized for his skill in combining different textures and different flavors, making them complement each other.  Chef Robuchon is also one of the chefs that have revolutionized the way “fine dining” is perceived.  In fact, many are saying that you probably will not know what fine dining really is until you have entered and dined at a Joel Robuchon restaurant.

30. Schloss Schauenstein http://www.schauenstein.ch/, Switzerland (New Entry)

A new addition to the list which has had the highest leap, Schloss Schauenstein is a new entry only this year but is now enjoying the 30th spot, a feat that many have not been able to accomplish.  Schloss Schauenstein and its head chef, Andreas Caminada, has been a well-kept culinary secret of Switzerland, but now that they landed the 30th spot, more food lovers will know of a place that serves tremendously flavorful dishes served creatively in beautiful crockery.

31. Le Quartier Francais http://www.lequartier.co.za/, South Africa

Up 6 spots, Le Quartier Francais of South Africa may be a rural retreat, but Head Chef Margot Jansen’s expertise in using local seasonal ingredients in her dishes is fast becoming known in the culinary world.  This is the best place where you can enjoy dishes like Ganzvlei Vastrap Cheddar – a delicious, playful, and adventurous dish that teases the taste buds and the eyes with its beautiful presentation and taste.

32. The French Laundry http://www.frenchlaundry.com/, USA

Head Chef Thomas Keller’s The French Laundry may be down 20 spots this year, a bigger blow since it had already dropped 12 spots last year, but diners of The French Laundry swear that this restaurant is still the best place where you can enjoy traditional American dishes with French influence.  In fact, the gastronomic experience that The French Laundry offers is still considered as incomparable, what with its dainty preparations of dishes that explode with flavors and textures.

33. Martin Berasategui http://www.martinberasategui.com/, Spain

Head chefs Yago Marquez and Maxime Fanton may be experiencing some disappointment right now as Martin Berasategui dropped down another four spots, but the fact that they are still in the top 50 positions is a big feat.  Martin Berasategui offers Basque cuisine with a contemporary twist, its flavors coaxed out by the perfect blending of other ingredients.  Their bold dishes are, in fact, the benchmark of Martin Berasategui and have made them a popular choice time and time again.

34. Aqua http://www.restaurant-aqua.com/, Germany (New Entry)

Aqua’s success in getting into the top 50 list is credited to its head chef, Sven Elverfeld.  Chef Everfeld’s dishes are known for challenging what one usually perceives in traditional European dishes.  He has the knack for modifying classical European cuisine and introducing into it his own version of the dish, and what comes out is a dish that simply explodes in taste and texture but not losing its classical side.

35. Combal.Zero http://www.combal.org/, Italy

Do you want a truly unique gastronomic experience that defies the term fine dining yet lends its own elegance to it?  If you do, then Combal.Zero is what you are looking for.  Head Chef’s Davide Scabin’s experimental way of cooking involves campari capsules that explode as well as the use of your fingers and even a mallet or a xacto knife when you dine at his restaurant.  This truly veers away from traditional fine dining, but Chef Scabin’s artistic and playful side will draw you in as you enjoy a truly unique time at Combal.Zero.  No wonder it moved up 7 places this year.

36. Dal Pescatore http://www.dalpescatore.com/, Italy

Dal Pescatore moved up 12 spots since last year, and this is all thanks to the efforts of Head Chef Nadia Santini.  After suffering from a disappointing blow of landing on the 48th position last year, the head chef and her crew show the world that they are one of the best as she pushed her restaurant back up.  Her classical Mantuan cuisine is still the best in this part of the world that it is not surprising to see international guests pay this restaurant a visit to enjoy its dishes.

37. De Librije http://www.librije.com/#passie/nl, Netherlands (New Entry)

If there is one thing that could be said about De Librije, a new entry to the list, is that this restaurant is recognized for emphasizing simplicity in its dishes.  Head Chef Jonnie Boer believes that lesser flavors make a better dish and that the secret is in choosing the ingredients that can coax the full flavors out of a dish.  The hotel offers a relaxing ambience amidst history since it is situated in a Dominican abbey that dated to the 15th century, and the food is deliciously excellent.

38. Tetsuya’s http://www.tetsuyas.com/, Australia

This year is probably a big blow to Tetsuya’s as it dropped down another 21 big spots from last year’s 17th place, after enjoying the 9th spot in 2008.  However, the fact that Tetsuya’s has been in the top 50 list time and time again is already a very big accomplishment, and the credit is given to its head chef, Chef Tetsuya Wakuda.  Tetsuya’s is world renowned for its fish menus and for showcasing the particular flavors of each Pacific Ocean gem.  You really should try their 13-course menu, which is simply superb.

39. Jaan Par Andre http://www.swissotel.com/EN/EXPERIENCES/Entertainment.html, Singapore (New Entry)

Jaan Par Andre is new to the list, and it is Head Chef Andre Chiang who brought it to the 39th spot.  The restaurant is situated at the Swissotel, so aside from the mouth-watering cuisine, diners can also enjoy a beautiful scenery amidst a relaxing and elegant ambience.  Chef Chiang makes use of rare ingredients such as purple carrots, black tomato, apple flower, and a whole lot more.  So, if you want a taste of something unique, then be sue to try Chef Chiang’s Forgotten Vegetables.

40. Il Canto http://www.certosadimaggiano.com/, Italy (New Entry)

It was Head Chef Paolo Lopriore’s move to offer non-native dishes that probably got them into the list, but more than that though, it was his exemplary cooking techniques that got Il Canto into the top 50.  His experimental cuisine brings out the full flavors of traditional Italian cooking, but he infuses it with his own style plus a mixture of non-Italian ingredients that made the dish all the more fascinating.  It will not surprise you to see Italian dishes mixed with Japanese ingredients that totally highlight each flavor.

41. Alain Ducasee Au Plaza Athenee http://www.plaza-athenee-paris.com/, France (Re-Entry)

A big feat, indeed, for Head Chef Christophe Moret’s Alain Ducasee Au Plaza Athenee for getting back into the top 50 list after being in the 86th position last year.  This restaurant spells luxury and elegance, and the dishes it serves spell delectable and scrumptious.  This is truly one restaurant that will make it worth your money as you enjoy a luxurious gastronomic experience, and for a plate priced at €175, it really is worth it.  Truly, Chef Moret learned his craft well from the master chef, Alain Ducasse.

42. Oaxen Krog http://www.oaxenkrog.se/, Sweden

Oaxen Krog came down another 10 spots from 32 last year and 16 the year before; however, this does not mean that the quality is not the same though.  Here at Oaxen Krog, you will get to enjoy the traditional cooking styles of smoking and curing from one of the best chefs of the world, Head Chef Magnus Ek.  Aside from this, you also get to enjoy yearly menus that have been reinvented to give them a new twist, made possible because the restaurant is closed for the winter season and Chef Ek has the opportunity to improve and recreate them.

43. St. John http://www.stjohnrestaurant.co.uk/, UK

St. John may have slipped down to 43 from 14, but this restaurant is still considered as the “temple” of British cuisine, and the recognition goes to its head chef, Fergus Henderson, for having placed St. John in the map of the culinary world, especially since its name has always been in the top 50 list.  He has perfected traditional dishes like roast bone marrow and given it his own twist to satisfy the palate of his diners, and there is more you can expect from Chef Henderson.

44. La Maison Troisgros http://www.troisgros.fr/, France (Re-Entry)

Head Chef Michel Troisgros did it again and placed La Maison Troisgos in the top 50 list.  Chef Troisgros has been in the industry of providing the best gastronomic experience to its diners for a long time, especially since he came from a culinary dynasty, his family having owned and managed the flagship La Maison Troisgros for more than eight decades now.  You are assured of scrumptious classic French cuisine here, perfected and recreated to suit the different tastes of his diners.  The chef is also a master at Japanese and Italian cuisine.

45. wd-50 http://www.wd-50.com/, USA (New Entry)

If there is one thing that sets wd-50 apart from the rest is Head Chef Wylie Dufresne’s skill in combining different ingredients that one does not usually see in a typical dish.  His experimental dishes will challenge the norm, and what comes out is a dish exploding with flavors and textures.  This is probably the only place where you will see and enjoy tamarind and peanut butter pasta, a very unlikely combination in itself but one that is filled with contrasting flavors that create the perfect harmony.

46. Biko http://www.biko.com.mx/, Mexico (New Entry)

Only launched last 2007, it is great praise indeed for Chefs Bruno Oteiza and Mikel Alonso for the big jump that Biko has had since last year.  From 81 to 46, these two are out to prove to the world that they deserve to be recognized.  They also specialize in Basque cuisine, and when you visit their restaurant, you have the option to choose either their creative dish or their traditional dish.  Whatever it is you choose though, it is going to be a feast to your senses as you enjoy your meal in this modern and trendy place.

47. Die Schwarzwaldstube http://www.traube-tonbach.de/, Germany

Head Chef Harald Wohlfahrt has some catching up to do as his restaurant, Die Schwarzwaldstube, slipped from the 23rd spot to the 47th.  However, just because it slipped down a few spots does not mean that they lost their touch.  In fact, Chef Wohlfahrt is recognized for his use of unique and local ingredients, so it should not come as a surprise to see quail and deer in the dishes that he prepares.  Of course, the fact that he only uses fresh produce makes a very big difference to his dishes.

48. Nihonryori RyuGin http://www.nihonryori-ryugin.com/, Japan (New Entry)

Classical Japanese cuisine at its best is what defines Nihonryori RyuGin.  Head Chef Seiji Yamamoto tends to stick with everything traditional when it comes to his cooking methods, and he always makes sure that he does not veer too much away from this although he is also known to push the boundaries from time to time.  Because of his skill in balancing tradition and modern cooking methods, he fast became popular in Japan, and now, his name and skill is already circulating in the international culinary world.

49. Hibiscus http://www.hibiscusrestaurant.co.uk/, UK (New Entry)

This year is a good year for Head Chef Claude Bosi and his restaurant, Hibiscus, as they climbed up from 56 to 49.  Chef Bosi’s culinary career stared when he was only 16, and during his training, he became an apprentice to some of the top chefs in the world, such as Alain Ducasse and Michel Rostang.  He went from one high-end restaurant to another, learning the techniques and improving his skill, and his being included in the top 50 is proof that the student is now at par with the teacher.  His cooking technique brings out the best flavors in his dishes, tantalizing the senses.

50. Eleven Madison Park http://www.elevenmadisonpark.com/, USA (New Entry)

Traditional French cuisine created through a very contemporary cooking method to showcase the clean and very simple flavors of the ingredients and then plated in a very creative, almost artistic way, is what you can expect from Eleven Madison Park’s Head Chef Daniel Humm.  Aside from the obvious creativity of Chef Humm, you will also detect a note of confidence in his dishes, a maturity that shows his skill.  This restaurant with Chef Humm at the helm is sure to go a long way and up the top 50 list.

51. Maison Pic http://www.pic-valence.com/, France

One dish that makes diners come back for more is Maison Pic’s Charolais beef tournedos steak, but there are other dishes, of course, that have earned their ways into the hearts of their diners, such as the Foie Gras Crème Brulee.  This year’s 2010 World’s Bests Restaurants placed them at the 51st spot, one shy spot away from getting into the top 50.  Nevertheless, with the talent that Head Chef Anee-Sophie Pic has, it will not come as a surprise if we see them at the top 50.

Jean Goerges came down from 19th place last year to the 52nd place this year.  Jean Georges of New York offers two types of seven-course tasting menus.  You can either choose their signature dishes consisting of Head Chef Jean-Georges Vongerichten’s recommended dishes, or you can also try their seasonal menu consisting of only the freshest produce.  The seven-course menus may be a bit costly; however, they also offer prix-fixe menus.  Chef Vongerichten creates delectable French dishes, marrying herbs and spices and coaxing the true flavors out of his dishes.

Chef Joel Robuchon really has something to be proud of this year as his second restaurant, the L’Atelier de Joel Robuchon in Hong Kong, got into the 53rd spot of the top 100 list, from the 55th.  Who cannot miss the grandeur of the place as they have some of the most delicious dishes in the world?  The dishes are so excellent, and it is just as fortunate that their prices are very reasonable.  The recognition that the restaurant received is due to Chef Joel Robuchon, of course, and the executive chef of L’Atelier de Joel Robuchon Hong Kong, who is Chef Philippe Groult who performed excellently to receive this prestigious award.

The Wasabi in India can be found at The Taj, and when you enter its doors, you will understand what elegance really means.  The theme of the Wasabi is contemporary, and the colors handsomely complement each other.  Wasabi is considered as the best Japanese restaurant in India, serving scrumptious sushi and other traditional Japanese cuisine.  Be sure to check out their sushi and teppenyaki counters and, of course, their sake bar, too.  The awards given to Wasabi, especially Wasabi’s getting into the top 100 list from 70 last year to 54 this year, is given to its head chef, Masaharu Morimoto.

Chef Joel Robuchon’s third restaurant to get into the top 100 this year is Robuchon A Galera of Macau, and this award only goes to show that this world-famous chef is, indeed, a master of his craft.  Head Chef Robuchon together with his executive chef, Francky Semblat, has once again showed excellence in their skills, offering appetizing dishes and mouth-watering courses that will impress its diners each time they visit the Robuchon A Galera.

Head Chef Michel Bras is the proud owner of Bras, a rural restaurant set in Laguoile and Aubrac, for having gotten into the top 100 of this year’s World’s Best Restaurants.  Chef Bras’ cuisine puts an emphasis on local ingredients and fresh produce as he creates traditional Basque dishes with a hint of Japanese influence.  One of all-time favorite dishes that is always being served is the Aligot, so be sure to try that when you visit Bas.  The restaurant itself offers a very comfortable atmosphere, and the service is excellent.  This year though came as a big blow for Bras as they dropped from the top 50 list where they were at the 7th place down to the 56th spot.

De Karmeliet offers a very relaxing atmosphere to its diners, and the dishes served are truly some of the best in the world.  This restaurant and its head chef, Chef Geert Van Hecke, truly deserve to be included in the list of top 100 restaurants in the world.  Chef Van Hecke specialty is French cuisine, although you will also find Belgian dishes here.  The combination of these two provides its diners a very unique gastronomic experience.  Proof of their success showed this year as this restaurant climbed from the 95th spot to the 57th.

Marcus Wareing at The Berkeley came down six spots from last year.  Head Chef Marcus Wareing of Marcus Wareing at The Berkeley is recognized in the culinary world as the brightest star in British cuisine.  His specialty is traditional French cuisine, and each of his dishes oozes in flavor and aroma, offering his diners a wonderful feast of the senses as they enjoy creatively plated dishes.  His restaurant offers a lavish yet very elegant atmosphere that speaks of class, and the service is superb.

Tantris may have slipped from the 44th position down to the 62nd, but it is still considered as one of the most astounding restaurants in Germany.  Head Chef Hans Haas is known for his non-conformist approach to cooking, and his dishes have always been called a gourmet fantasy.  Chef Haas only makes use of organic ingredients, especially those that can be found locally.

This prestigious London restaurant has dropped down from the 51st post to the 66th, but it is still a very heart-lifting thing to be included in the top 100 restaurants of the world.  The authentic Japanese dishes created by Head Chef Dan Segall are amazing, that is really is worth the expensive price.  If you want to dine at Zuma and enjoy its dishes, be sure to book a table in advance because it is this popular.  Zuma and the people behind it truly know what the diners want in a Japanese restaurant.

Probably one of the best French restaurants in Sydney, Australia, Marque has been included in the prestigious list of the world’s top 10 restaurants, and at 67, this is not a small feat.  Praise should be given to its head chef, Chef Mark Best and his team for earning an award such as this.  Chef Best’s attention to detail when it comes to what fine dining truly is is what pushed to this restaurant to the top.  The dishes are well executed, and the wine totally complements each dish.

Varvari dropped down from 66 to 75 this year, but it will not fail you if you are after a satisfying gastronomic experience.  Head Chef Anatoly Komm is known for his skill in deconstructing traditional Russian cuisine and then recreating it.  Because of his skill, he fast became known as the gourmet child of the Russian culinary world, and his creations earned the praise of many of his diners.  The same skill is also what brought his restaurant to be included in the top 100.

Head Chef Alexandre Gauthier gave La Grenouillere something to be proud of as his restaurant got into the top 100 list of the World’s Best Restaurants.  La Grenouillere used to be a Picardy farmhouse, and the father and son tandem of Chef Roland and Chef Alexandre Gauthier converted the old building into a restaurant with a beautiful view of the river.  This scenery coupled with Chef Alexandre Gauthier’s skill in French cuisine made them a favorite restaurant of diners.

Langdon Hall has numerous awards under its belt, and this year, they added another one as its head chef, Chef Jonathan Gushue, took them to the 77th spot of the World’s Best Restaurants.  Chef Gushue is known for his passion in creating dishes inspired by the French cuisine and infusing his Mennonite heritage into his creations.  He has his own vegetable garden and only uses local and fresh ingredients for his dishes.  Chef Gushue’s fabulous dishes and the restaurant’s ambience truly delight the senses.

Located in Barcelona, Spain, Can Fabes made its name all the more famous in the culinary world as it became the 79th best restaurant in 2010’s S. Pellegrino’s list.  Its head chef, Chef Santi Santamaria, is known for his excellent interpretation of the traditional and classical Mediterranean cuisine, giving it his own twist that makes every dish a feast to the senses.  He believes that meals are to be enjoyed leisurely, and this is translated well into his creations.

Plavi Podrum is a charming restaurant known for their fresh and very delicious seafood dishes.  Situated in Volosko, Croatia, a tiny fishing village, Daniela Kramaric is not only the head chef of Plavi Podrum but is also the head sommelier.  She works in the kitchen with other Croatian chefs to give their diners the best in seafood dishes, and she also makes it a point to pair the dish off with the best wine to highlight and accentuate the full flavors of both.  All in all, Plavi Podrum is recognized in Croatia as the place to be for seafood, and this year, they made their mark as they got included in the top 100.

The River Café may have dropped down from the 71st position to the 82nd, but this is still the best restaurant where you can get a very hearty meal.  There are no frills or foams or emulsions here, just clean and simple flavors to satisfy your cravings for food, plated in a very elegant and uncluttered style.  The River Café also oozes with a very warm and cozy ambience that will make its diners feel right at home.  Head Chef Ruth Rogers knows what her diners want, and good food is what she gives them.  Sadly, Chef Rose Gray, co-founder of The River Café with Chef Rogers, passed away earlier this year.

A big drop for Mirazur – from 35 to 83.  Nevertheless, this elegant restaurant in Menton, France will still give you delectable French cuisine with a modern twist created by the great chef, Head Chef Mauro Colagresco, and the view that the restaurant offers is just a big plus to the gastronomic experience that you can have at the Mirazur.  The striking scenery and the wonderful dishes are enough to make you come back for more.

This year is Head Chef Gunther Hubrechsen’s year as his restaurant, Gunther’s of Singapore, got into the list of the World’s Best Restaurants, landing at the 84th post.  He specializes in haute French cuisine, and using only the freshest ingredients, Chef Hubrechsen turns a simple dish into a dish exploding with flavors that totally complement each other.  He plates his dishes in a very simple manner so as not to take the diner’s attention away from the taste of his dishes, but they are executed very well.

It is indeed wealth, health, and happiness for Doce Uvas as they received great praise from the judges of S. Pellegrino and landed on the 85th position of their list.  Doce Uvas mainly serves traditional Spanish cuisine like paella and jamon, but Head Chef Adrian Ketglas gives his dishes more than just what you would usually expect from a Spanish dish, and his skills paid off when his restaurant got into the top 100 list.

Manresa moved up seven spots this year and with very good reasons.  This is probably the only place in the United States where you can enjoy a truly unique dish highly influenced by the French cuisine and infused with contemporary Catalan cooking.  Head Chef David Kinch knows how to take advantage of what California has to offer and uses the local and seasonal ingredients of the area to refine his dishes.  Diners have so much more to expect from this very innovative chef.

If there is one thing that can be said about Enoteca Pinchiorri and its head chef, Chef Annie Feolde, is that their dishes are always evolving, and each of them will take you on gastronomic journey as you enjoy her innovative yet very down-to-earth cuisine.  Her dishes pay homage to all parts of Italy, especially Tuscany, and it will not come as a surprise that some of her trademark dishes are highly influenced by Tuscany cooking like the traditional tomato and bread soup of Tuscany.

It was in 2005 that Head Chef Shuzo Kishida left L’Astrance to open his own restaurant, Quintessence, the year after.  Having learned from some of the best chefs in the world like Chef Pascal Barbot, he took what he learned and added his own skill and cooking techniques to his dishes in Quintessence.  Making use of only the freshest ingredients, he could turn a very simple dish into a very stunning and innovative one, full of flavors yet totally balancing each other out so as not to overwhelm the diner.

It is no small feat to be named as one of the top 100 best restaurants in the globe, so Restavracija JB’s addition to this prestigious list is credited to its head chef, Chef Janez Bratovž.  His dishes are Mediterranean cuisine highly influenced by international cuisine like French, Italian, Slovene, among others, but the pleasant thing is that you still get to enjoy the feel of tradition in his dishes.  Chef Bratovž is also recognized for his respect for seasonal ingredients and his skill in incorporating them into his cuisine, giving his diners simple yet flavorful meals.

Another big drop for Le Gavroche as they slipped down from the 58th position to the 92nd, but nonetheless, the gastronomic experience that Le Gavroche offers is still supreme.  The new head chef, Chef Rachel Humphrey has been an apprentice of Chef Michel Roux since the mid 1990s, and was just recently named as the head chef last 2008.  In fact, she is the first lady head chef that has ever taken the helm of the restaurant’s kitchen, so she really has a lot to live up to.  Already, she is incorporating her own cooking style and preferences in the usual menus offered by Le Gevroche.

Although Café Pushkin dropped 30 spots, Café Pushkin will not let you down if you are looking for a great place where you can enjoy a great meal with a special person.  Café Pushkin is a very chic restaurant in Russia that offers delicious traditional Slavonic cuisine mixed with Russian influence, creating a feast for the senses.  Head Chef Andei Makhov’s is famous for his blinchiki which is a Russian pancake served with black caviar as well as borscht and pelmeni.  He also creates a very delicious Tsar’s Sturgeon which is a must when you dine at Café Pushkin.

Amador from Germany has a lot of catching up to do if they want to stay in the top 100 World’s Best Restaurant since they fell from the 80th spot down to the 100th.  This restaurant mainly serves French cuisine, but what sets them apart from the rest of the French restaurants is Head Chef Juan Amador’s skill in making use of the latest kitchen technology to recreate traditional dishes and give them a contemporary twist.  Chef Amador’s dishes never fail to give his diners a very interesting gastronomic experience with taste combinations that totally provide balance and harmony.
